Whoever came up with that “easy as pie” cliché sure hadn’t ever made a pie from scratch. There’s a reason 1950’s housewives and retired grandmothers are associated with pies—they have the cooking skills and 2+ hours required to make them. Nevertheless, pies remain unrivaled among comfort foods and are a fall favorite.
For those of us who want to enjoy the pie taste without the fuss, here is a great alternative. My version of crock-pot apple cobbler assembles in minutes, tastes deceivingly like the real thing and leaves a lingering, inviting aroma that will permeate your entire apartment or house.
3 cans apple pie filling
2 cups sugar
2 cups water
2 teaspoons cinnamon
½ teaspoon nutmeg
2 small cans flakey biscuits
Put first five ingredients in a slow cooker and stir. Cover mixture with biscuits, breaking or flaking them apart as necessary. Cook on high for 3-4 hours. Serve topped with vanilla ice cream for an a la mode treat. *Note: This can be made more guilt-free by using no-sugar-added apple pie filling and/or substituting Splenda for sugar.
